For the Burger Patties
Ingredients
- 2 lbs ribeye meat
- 1 lb brisket trimmings, including some fat
- 1½ tablespoons Barrel & Spice Co. Cowboy Gold
- 8 slices cheddar cheese
- Pickles
- Chipotle sauce
- 4 brioche buns
Bourbon Bird Dust Onions
- 1 large onion, sliced
- 1 tablespoon butter
- 1 teaspoon Barrel & Spice Co. Bird Dust
- 2 tablespoons bourbon
Cooking Instructions
1. Grind the Beef
Cut the ribeye and brisket trimmings into pieces small enough for your grinder.
Grind the meats together, making sure some of the brisket fat is included in the mixture. The fat helps create the juicy texture you want in a great burger.
Divide the mixture and form into 8 patties for four double-patty burgers.
Avoid overworking the meat. Loosely formed patties will stay more tender.
2. Season With Cowboy Gold
Season both sides of each patty generously with Cowboy Gold.
Allow the seasoning to sit on the meat for a few minutes while you prepare the onions and heat the grill.
3. Make the Bourbon Onions
Melt the butter in a skillet over medium heat.
Add the sliced onions and cook slowly until they begin to soften and caramelize.
Season with Bird Dust and continue cooking until the onions develop a deep golden color.
Add the bourbon and cook for another minute or two until most of the liquid has cooked off and the onions become glossy.
Remove from heat and set aside.
4. Grill the Patties
Preheat your grill, griddle, or cast-iron skillet over medium-high to high heat.
Place the patties onto the hot cooking surface and allow them to develop a good crust before flipping.
Cook until they reach your preferred doneness and a safe internal temperature.
During the final minute of cooking, place a slice of cheddar cheese over each patty and allow it to melt.
5. Toast the Brioche Buns
Lightly toast the brioche buns on the grill or griddle.
That little bit of crispness helps the bun stand up to the juice, cheese, onions, and sauce.
6. Build the Burger
Spread chipotle sauce on the bottom bun.
Add pickles, followed by the first cheddar-covered patty.
Stack the second patty on top.
Pile on the bourbon Bird Dust onions and add another drizzle of chipotle sauce if you want an extra bold finish.
Top with the toasted brioche bun.

Don’t trim away all of the brisket fat.
That fat is one of the keys to creating a rich, juicy burger. Ribeye brings incredible beef flavor, while the brisket trimmings help give the patties the texture and moisture you want when cooking over high heat.
And if you’re a chipotle sauce person, don’t be shy with it.
