
The Best Salmon Dinner Night
This easy Barrel & Spice Co. salmon recipe delivers bold flavor with a beautiful crust and plenty of flexibility. Choose Honey Pecan for a sweet, nutty profile or Cherry Chipotle for a smoky sweet-heat flavor, then layer with SPG Black before cooking.
Grill it, smoke it, sear it in cast iron, or bake it at 400°F for an easy dinner that works any night of the week.
Ingredients
- 4 salmon fillets, about 6 oz each
- 1–2 tablespoons olive oil

2–3 tablespoons Barrel & Spice Co. Honey Pecan
OR - 2–3 tablespoons Barrel & Spice Co. Cherry Chipotle
- 2–3 tablespoons Barrel & Spice Co. SPG Black
- Lemon wedges, optional
- Fresh herbs, optional
Prepare the Salmon
- Pat the salmon fillets dry and allow them to sit at room temperature for approximately 15 minutes.
- Lightly brush or drizzle the salmon with olive oil.
- Generously season with Honey Pecan or Cherry Chipotle.
- Add a good layer of SPG Black over the top before cooking.
- Choose your preferred cooking method below.
- Allow the salmon to rest for approximately 3–5 minutes before serving.
Grill
- Preheat the grill to medium-high heat, approximately 400–450°F.
- Place the salmon skin-side down.
- Grill for approximately 4–5 minutes.
- Flip and cook for another 3–5 minutes, or until the internal temperature reaches approximately 125–130°F.
Smoke
- Preheat your smoker to 225°F.
- Place the salmon skin-side down.
- Smoke for approximately 45–60 minutes, or until the internal temperature reaches approximately 125°F.
Cast-Iron Sear
- Heat a cast-iron skillet over medium-high heat.
- Add a small amount of oil.
- Place the salmon skin-side down and sear for approximately 4–5 minutes.
- Flip and cook for another 3–4 minutes, or until the internal temperature reaches approximately 125–130°F.
Bake
- Preheat the oven to 400°F.
- Place the salmon on a parchment-lined baking sheet.
- Bake for approximately 12–15 minutes, or until the internal temperature reaches approximately 125–130°F.
Chef Tip
Salmon will continue to cook slightly after you remove it from the heat. For a moist, flaky result, pulling it around 125°F works well if that level of doneness suits you. USDA guidance for food safety recommends cooking fin fish to 145°F.
Finish with fresh herbs and lemon wedges if desired.
