This recipe combines smoked gouda, sharp cheddar, Monterey Jack, Gruyère and Parmesan for a smooth, ultra-cheesy sauce with depth, warmth and just the right amount of seasoning. It’s the perfect side dish for barbecue, family dinners, holidays or anytime you want next-level mac and cheese.
Ingredients
- 1 lb elbow macaroni or cavatappi
- 4 tablespoons butter
- 1/4 cup flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups smoked gouda, shredded
- 1 1/2 cups sharp cheddar, shredded
- 1 cup Monterey Jack, shredded
- 1 cup Gruyère, shredded
- 1/2 cup Parmesan, grated
- 1 tablespoon Barrel & Spice Co. Signature
- 1 teaspoon Barrel & Spice Co. Bird Dust
- Salt and black pepper to taste
Instructions
- Cook the pasta to al dente according to package directions. Drain and set aside.
- In a saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for about 1 minute to form a roux.
- Slowly whisk in the milk and heavy cream until smooth.
- Add Signature and Bird Dust. Simmer gently until the sauce begins to slightly thicken.
- Stir in the smoked gouda, sharp cheddar, Monterey Jack, Gruyère and Parmesan. Mix until fully melted and creamy.
- Add the cooked pasta and fold until fully coated in the cheese sauce.
- Serve creamy as-is, or transfer to a baking dish and bake until hot and lightly golden on top.
Chef Tip
For an extra golden finish, top with a little additional cheddar and Parmesan, then broil for 2–3 minutes before serving.
